Mission conducted from 03-08 to 03-09-05 at “LEMLEM BAKERY” owned by Mrs. Rita Zuccato in Schascermane (Ethiopia) on behalf of the UN and the Italian Ministry for Foreign Affairs.

My job was aimed at improving production and finding the right flour to bake well-risen bread rolled up with soft dough.

I also visited the mills in the area and talked to local experts in order to find the right flours so as to constantly obtain an excellent product, by reducing problems for bread producers.
