PROFESSIONAL EXPERIENCE
FROM 1976 TO 1995 OWN BAKERY
I started by producing 150 kg of bread a day with home delivery. After 6 years, owing to structural changes in the large-scale retail trade, I started working as supplier. After 10 years, my production amounted to 5000 kg per day, 17 collaborators and a delivery system covering the entire Region Emilia Romagna.
FROM 1995 TO 1998 BAKERY DEPARTMENT HEAD IPER CONAD MODENA
My job was to reorganize production, improve quality, introduce new kinds of products and train staff.
FROM 1998 TO 2001 PLANT MANAGER OF PANETTERIE ITALIANE, AN INDUSTRIAL BAKERY IN THE PROVINCE OF BOLOGNA
This industrial bakery was part of a large cooperative in Bologna. I was in charge of the delicate reorganization of production, training of staff and introduction of new products. Daily production was 25/30 tons with 50 collaborators.
FROM 2001 TO 2002 MIXING DEPARTMENT MANAGER IN A BAKERY IN REGGIO EMILIA
My task was to coordinate production and manage the bakery in the absence of the owner, improve quality and train staff.
FROM 2002 TO 2003 SHIFT SUPERVISOR AT THE COMPANY C.R.M., LEADER IN THE PRODUCTION OF “PIADINAS” IN THE PROVINCE OF MODENA
My job was to provide advice on the resolution of several issues related to the production line of “piadinas”, the choice of raw materials, the improvement of mixtures and the retraining of staff.
